For more than 30 years, Joseph "Joe" Mammone has played a significant role in

shaping Melbourne's hospitality landscape through a career built on great food,

genuine service and an instinct for creating places people want to return to.

Beginning his career at eighteen, Joe developed his foundations in some of Melbourne's most respected Italian restaurants before travelling to New York, where he gained valuable experience working within one of the world's most influential hospitality scenes.

Returning home, he continued to refine his craft at Melbourne institution Caffé é Cucina, experiences that would shape the philosophy behind every venue he would later create.

Over the following three decades, Joe founded and led some of Melbourne's best-known Italian restaurants and hospitality venues, including Il Bacaro, Sarti, Saratoga, Bar Carolina, Cantina Carolina, Tetto di Carolina and Marameo. Collectively, these businesses have left a lasting mark on Melbourne's dining culture and helped define what contemporary Italian hospitality looks like in the city.

His work has been recognised throughout the industry, including maintaining a prestigious One Hat award for eight consecutive years, an achievement thatreflects not only culinary excellence, but the consistency required to deliver exceptional hospitality year after year.

Today, Joe brings that experience to a broader stage. Working as a hospitality consultant, he partners with property developers, hotel groups, tourism destinations and independent operators across Victoria, New South Wales and Queensland, helping shape new restaurants, bars and hospitality precincts from concept through to opening. His work spans venue strategy, concept development, food and beverage direction, operations, team recruitment, staff training and guest experience. Working alongside head chefs and beverage managers, Joe helps develop and curate food and beverage menus that reflect the venue’s concept, audience and commercial objectives — drawing on decades of practical experience building successful hospitality businesses himself.
